Vietnamese green curry lobster roll

SERVES 1

 

INGREDIENTS

  • 100g lobster tail meat 

  • 1 Thai green curry kit 

  • 1 long brioche roll 

  • 1 tbsp unsalted butter 

  • 5 Thai basil leaves

  • 5 slices of cucumber 

  • 1 kaffir lime leaf (super thinly sliced) 

 

METHOD

  1. Prepare curry

  2. Tear prepared lobster meat into small pieces and add to curry, gently warm through and allow to cool to room temperature

  3. Cut brioche from the top lengthways, allowing roll to be served in standing position

  4. Brush the inside with melted butter and toast

  5. Add lobster curry mixture into roll, garnish with cucumber slices, torn Thai basil and kaffir lime leaf julien
