Steamed Asparagus, Truffle Egg Salad, Chives
 

INGREDIENTS

  • 5 spears of asparagus 

  • 3 soft boiled organic egg (prepared ahead) 

  • 3 tbsp mayonnaise 

  • 2 tsp black truffle sauce 

  • 2 tsp chive finely sliced 

  • 1 tsp freshly squeezed lemon juice 

  • Salt and pepper to taste

 

METHOD

  1. Peel and blanch white asparagus, refresh into ice water

  2. To prepare egg salad peel and grate eggs into a large mixing bowl

  3. Add mayonnaise, truffle paste, salt, pepper, lemon juice and chive and gently fold, check seasoning

  4. Place truffle egg salad on the bottom of the plate and arrange steamed asparagus on top
