Freshly shucked oysters, Thai green chili dressing

SERVES 2

 

INGREDIENTS

  • 10 live oysters (unshucked) 

  • 100g Thai green chili dressing 

    THAI GREEN CHILI DRESSING

  • 1 banana shallot (peeled & thinly sliced into half moons)

  • 2 spring onions (green part only finely chopped) 

  • 4 tbsp fish sauce 

  • 3 tbsp palm sugar 

  • 5 tbsp lime juice (freshly squeezed) 

  • 2 long green chili (seeds removed & thinly sliced into half moons) 

 

METHOD

  1. Add shallot, spring onion and green chili to mortar and pestle and grind into a paste

  2. Add palm sugar and grind into a paste

  3. Finally add fish sauce and lime juice and mix to evenly incorporate

  4. Taste and adjust seasoning (sweet, sour, salty)

  5. Serve chilled
